Mont-Blanc ~ October Class ♪

秋といえば、そうです、モンブランを作る日がやってきました(^-^)/ 栗とかかぼちゃとかがおいしい季節ですねぇ。(って、1ヶ月前の話) どちらのパティスリーでも、栗のなんとかとか、かぼちゃのなんとかっていうのが店頭に並ぶシーズン。女性の大好きなお菓子のひとつなのは言うまでもありません。旬の栗を使ったお菓子の王道、モンブラ~ン♪ それを作れるなんて、幸せー!

marron_creamモンブランの上にのってるクリームの部分、ここに使うのは先生いち押し、SABATONのパード・ド・マロン(Pate de Marrons)とクレーム・ド・マロン(Cream de Marrons)。Pate de Marronsはマロンペースト、甘さはほとんどなく、まさに濃い~栗そのものの味。

一方、Cream de Marronsはすでにシロップやバニラが入っていて、味がついているのでこのままパンにつけて食べれます。先生のわかりやすい説明によると、トマトピュレとトマトケチャップのような関係なんですね。Pate de Marronsはこれから何かを加えてお菓子を作るためのもので、マロンクリームはすでに加工されているものです。両方入れると、おいしさ倍増~ぜいたくぅ~。

egg_white_baseまず、モンブランの台になる部分。砂糖を加えたメレンゲをかた~く作って、さらに粉砂糖を加えまぜ、セルクルの中に絞り、120℃のオーブンで約2時間乾燥焼きしま~す。出来たものは、軽石のような(たとえが悪っ)、ちょっとブラウンがかったサクサクな食感のワタ飴かな..う~うまく表現できない。

15cm型の底に焼いたメレンゲをひいて、その上にクリーム・シャンティィ(生クリーム)を高めに盛り、その真中にガルニチュール(ラム酒につけたマロングラッセ)をおきます。

ガルニチュールを生クリームで埋めていくようにまわりからのせ、最後にクレームモンブラン(マロン・ペーストと牛乳をまぜたものに、マロン・クリーム、バターを加えてまぜたもの)を搾り出します。あのモンブランのそばみたいなデコレーション、穴がいくつもあいた先っちょがあるんですねぇ。すごい~感動~(^-^) 搾り出してみたらそれらしく見えてきました。

mont_blanc3持って帰るために型に入れたままクレームモンブランを上からのせたので、型から出すと下の方が..な状態ですが、なんとな~くモンブランらしく見えますでしょうか。バッテンを書くようにやったつもり。モンブランを作る工程をよく知らなかったというか、あんまり考えたこともなかったのですが、あ、あんなにバターが入っていたのね~ 汗 どおりでおいしいわけだけど。

mont_blanc4「うまく絞れなかったときは、こうしましょう~」って、これは試食用に先生が仕上げた方のモンブラン。これはまたこれで素敵~美しぃ~♪ こういうモンブランも見かけますよね。仕上げはお好みでぇ~。味はもっちろん、激うまーっ!想像とは逆で、そんなに工程は複雑じゃないのにほんとのモンブランが作れるんですね~。中はしっとりふわふわ、台のメレンゲはサクサクで不思議な食感。

最後はわがモンブランの断面図。ゴロっと大き目のガルニチュールがあたったら、なんだか幸せ~♪

Suggyさん、そ、そうか、お菓子作るときって基本的にホールだから、あんまり気にしてなかったけど。たしかにデカっ!かも..笑
面倒なときは、そのまま皿に乗せて毎日、ハジからちびちび食べるときありますが、これは非常~に危険です。どのくらい食べたかわからない~~ キャー!^^;
